Tridoshic Vegetable Curry

Ingredients (2 servings)

  • Half cup of frozen green peas
  • Half cup of sliced carrots
  • 1 cup of green string beans or asparagus cut in pieces
  • 2 small (or 1 big) potatoes cut into small pieces
  • 1 cup of basmati rice
  • 1 tbsp of ghee or coconut oil
  • 1 tsp of turmeric
  • 1 tsp of cumin seeds
  • 1 tsp of coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

Heat the ghee or coconut oil in a pan over medium heat. Add cumin seeds and let them splutter. Add the vegetables and sauté for 2-3 minutes.

Add turmeric, coriander powder, and salt. Mix well. Add a small amount of water, cover and cook for 10-15 minutes until vegetables are tender.

Serve over basmati rice and garnish with fresh coriander leaves. This warming curry balances all three doshas — Vata, Pitta and Kapha — making it perfect for everyone.
